Kombucha is a traditional beverage of sweetened black tea fermented with a symbiotic association of acetic acid bacteria and yeasts. In this study, kombucha fermented beverage (KFB) appeared to include nine chemical groups (alcohols, acids, lactones, condensed heterocyclic compounds, antibiotics, esters, aldehydes, fatty acids, and alkaloids) of many bioactive metabolites, as elucidated by gas chromatography–mass spectrometry (GC-MS) and IR spectra. The fermented metabolic components of KFB seem collectively to act in a synergistic action giving rise to the antimicrobial activity. Four types of kombucha preparations (fermented, neutralized, heat-treated and unfermented) were demonstrated with respect to their antimicrobial activity against some pathogenic bacterial and fungal strains using agar well diffusion assay. KFB exerted the strongest antimicrobial activities when compared with neutralized and heat-treated kombucha beverages (NKB and HKB). Staphylococcus aureus ATCC6538 (S. aureus) and Escherichia coli ATCC11229 (E. coli) were the organisms most susceptible to the antimicrobial activity of kombucha beverage preparations. Finally, the KFB preparation showed remarkable inhibitory activity against S. aureus and E. coli bacteria in a brain heart infusion broth and in some Egyptian fruit juices (apple, guava, strawberry, and tomato). These data reveal that kombucha is not only a prophylactic agent, but also appears to be promising as a safe alternative biopreservative, offering protection against pathogenic bacteria and fungi. 相似文献

利用分离自新疆酸马奶的发酵乳杆菌RC1、植物乳杆菌RC4制备直投式发酵剂, 制作特色风味鲫鱼发酵香肠, 测定其游离脂肪酸、游离氨基酸含量, 并对其血管紧张素转换酶(Angiotensin Converting Enzyme, ACE)抑制率、抗氧化活性、抑癌率进行了研究. 结果表明: 当发酵剂接种量为3%(V/V), 37℃发酵5h, 65℃烘烤30min, 鱼肉发酵香肠口感较佳, 表面鲜亮, 肉质细腻, 有特殊香味. 发酵香肠组织破碎液的游离脂肪酸含量为15.43mmol?hg-1, 游离氨基酸为43.94 mg?hg-1; 其ACE抑制率为78.18%, 抗氧化性能的?O2-自由基清除率、?OH自由基清除率、DPPH清除率分别为30.97%、53.24%和62.75%; 以上指标均高于自然发酵的对照组. 另外, 上述鱼肉发酵香肠组织破碎液稀释1倍后对乳腺癌细胞的抑癌率高达68.60%. 相似文献

The microstructure/texture evolution and strengthening of 316?L-type and 304?L-type austenitic stainless steels during cold rolling were studied. The cold rolling was accompanied by the deformation twinning and micro-shear banding followed by the strain-induced martensitic transformation, leading to nanocrystalline microstructures consisting of flattened austenite and martensite grains. The fraction of ultrafine grains can be expressed by a modified Johnson-Mehl-Avrami-Kolmogorov equation, while inverse exponential function holds as a first approximation between the mean grain size (austenite or martensite) and the total strain. The deformation austenite was characterised by the texture components of Brass, {011}<211>, Goss, {011}<100>, and S, {123}<634>, whereas the deformation martensite exhibited a strong {223}<110> texture component along with remarkable γ-fibre, <111>∥ND, with a maximum at {111}<211>. The grain refinement during cold rolling led to substantial strengthening, which could be expressed by a summation of the austenite and martensite strengthening contributions. 相似文献

钙钛矿薄膜的气相制备是一种极具潜力的工业化生产工艺,但薄膜的质量控制目前远落后于溶液制备法.本文通过建立PbI_2薄膜向钙钛矿薄膜完全转化过程中反应时间、晶粒尺寸与温度的关系,实现了薄膜的质量优化及大面积钙钛矿薄膜的制备,将薄膜的平均晶粒粒径从0.42μm优化到0.81μm.基于空间电荷限制电流模型对缺陷密度的研究显示,钙钛矿薄膜的缺陷密度由5.90×10~(16)cm~(–3)降低到2.66×10~(16)cm~(–3).光伏器件(FTO/TiO_2/C_(60)/MAPbI_3/spiro-OMeTAD/Au结构)测试显示,面积为0.045cm~2器件的平均光电转换效率从14.00%提升到17.42%,最佳光电转换效率达到17.80%,迟滞因子减小至4.04%.同时,基于180℃制备的1cm~2器件的光电转换效率达到13.17%. 相似文献

This study establishes an explicit relation between spatial two-point correlation function (TPCF) and volumetric (or three-dimensional) grain size distribution for aggregates of statistically equiaxed grains by extending a prior study (Sha, JASA, 2018). This relation is further validated by applying it to available TPCF and volumetric grain size distribution in the literature. Based on this relation, analytical attenuation coefficients for longitudinal and transverse waves, accounting for volumetric grain size distribution, are derived under Born approximation for macroscopically isotropic polycrystals of equiaxed triclinic grains. These attenuation models are applicable for whole frequency range except geometric region. Moreover, scattering coefficients for a polycrystal of equiaxed triclinic grains with a volumetric grain size distribution are obtained. Finally, the analytical attenuation model for the longitudinal wave is verified by comparison with existing 3D finite element simulation results in the literature. This theoretic study has practical applications to the inverse determination of volumetric grain size distribution from ultrasonic measurements. 相似文献

This paper develops a new phase--field model for equiaxed dendrite
growth of multiple grains in multicomponent alloys based on the
Ginzberg--Landau theory and phase--field model of a single grain.
Taking Al--Cu and Al--Cu--Mg alloys for example, it couples the
concentration field and simulates the dendrite growth process of
multiple grains during isothermal solidification. The result of
the simulation shows dendrite competitive growth of multiple grains,
and is reapplied to the process of dendrite growth in practical

动床水流中,泥沙起动之后,往往要出现沙纹,沙纹成因各家的解释不一。白玉川,罗纪生的观点是:沙纹的尺度较小,主要是由于明渠层流不稳定性波或床面近壁流层中小尺度拟序结构发展演化所致。当床面边界附近扰动波或拟序结构以及水流自身所产生的床面底部切应力大于Shields切应力后,床面即产生响应,形成沙纹;如果扰动所产生的扰动切应力频率接近床面泥沙固有频率,则产生与泥沙颗粒的共振,这种现象也称之为“泥沙的检波性质”,此时床面发生最大响应,沙纹发展速度也最快。 相似文献

Microstructural changes, such as the density of grain boundary (GB) and dislocation density, due to isochronal annealing in severely plastic-deformed commercial purity aluminium up to 523 K was evaluated using electrical resistivity measurements and scanning transmission electron microscopy.
